Peanut Butter Cookies

1 cup soft shortening (half butter)

1 cup peanut butter

1 cup granulated sugar

1 cup brown sugar (packed)

2 eggs

2 cups flour

1 tsp. baking powder

1 tsp. baking soda

tsp. salt

Heat oven to 375 degrees (quick moderate).

Mix shortening, peanut butter, sugars and eggs thoroughly.
Measure flour by dip-level-pour method. Mix rest of ingredients and stir in. Chill dough.

Use an ice cream scoop size of dough for each cookie. Place 4 inches apart on a lightly greased baking sheet.
Flatten, crisscross fashion, with a fork dipped in flour.

Bake 12-14 minutes, or until set but not hard.

Makes about three dozen cookies.
